Sweet potato wrap is a healthy and wholesome go-to meal for any occasion. You will notice that this recipe is quite simple and anyone can assemble them with store bought tortillas and canned foods. You will only need to prepare roasted sweet potatoes and you will see that it is no rocket science. We will now be building this from scratch – yes, even your older kids can do this. WHAT YOU WILL NEED for SWEET POTATO WRAP
Ingredients
Note: 1 cup = 235 ml
For assembling the wrap
- 8 Chia chapatis / any tortilla of your choice
- 3 cups baby spinach, loosely packed
- 4 cups roasted sweet potato
- 2 avocados, cut to slices
- 2 cups black beans, cooked/baked or canned OR 1 cup black beans, raw
- 1 cup chipotle dressing
- Salt to taste (a smidgen per wrap)
- Pepper to taste (a smidgen per wrap)
Kitchen tools
- Instant Pot / Pressure cooker
- A mix of 5 medium and small bowls
- Large plate
PREPARATION – SWEET POTATO WRAPS (with step-by-step photos)
Step 1 – Place a chia chapati on a plate, layer a few spinach leaves, 2 Tbsp. cooked black beans, 2 Tbsp. roasted sweet potatoes, and 2 slices of avocados. Drizzle 1-2 Tbsp. chipotle dressing, and sprinkle salt and pepper to taste
Step 2 – Fold the chapati carefully as shown below and serve
Use a toothpick to hold the wrap’s shape if you intend to serve it on a plate. If you plan on taking this for a picnic, wrap each roll in parchment paper. Reduce the dressing to half and carry the rest in a small container, to avoid making the chapatis soggy

Wraps took an entirely different form during my childhood in India. In fact we didn’t even call them wraps. My mom would simply roll chapatis with ghee-sugar, or jam, or fill it with a dry potato curry and set it in our lunch boxes. I heard about kathi rolls and veg frankies in fast-food joints during my college days with new fillings – e.g paneer. After moving to the US, I learnt that build-your-own wraps were very convenient for many vegetarians who face limited options. My family jumped onto the wrap bandwagon and started going crazy at home with different types of fillings – potatoes, canned chickpeas, paneer, mushrooms – the list was endless.
