WHAT YOU WILL NEED for COCO CHOCO NUT
Ingredients
Note: 1 cup = 235 ml
- 1 Tbsp. ghee (clarified butter)
- ¼ cup whole raw almonds chopped to tiny cubes
- 200 gms / 2 cups (approx.)medium/fine dry unsweetened desiccated coconut
- ¼ cup semi-sweet chocolate chips
- ½ can / 150 ml sweetened condensed milk
Kitchen tools
- 1 small flat bottom pan
- 1 medium size mixing bowl
- 1 flat ladle
- 1 flexible spatula
Desiccated coconut is fresh coconut that has been shredded or flaked and dried. It is typically unsweetened, but the term is sometimes also used to refer to the less dry sweetened flaked coconut as well. Be careful to use the dry unsweetened variety, and certainly not fresh or frozen coconut
After you chop almonds, discard the dust since this will burn quickly while roasting and will ruin the taste. You can use it in your porridge instead
PREPARATION – COO CHOCO NUT (with step-by-step photos)
Step 1 – Roast ¼ cup chopped almonds using ½ Tbsp. ghee in a small pan on medium heat and set it aside
Step 2 – In a medium size mixing bowl, gently mix 200 gms unsweetened desiccated coconut (2 cups approx.), ¼ cup roasted almonds, and ¼ cup semi-sweet chocolate chips
Step 3 – Pour ½ can of sweetened condensed milk and mix well until everything is well incorporated. The mixture should be moist and sticky
Step 4 – Grease your palms with a little ghee, scoop in ½ Tbsp. of the mixture from step 3 and roll into balls
Keep greasing your hands as necessary. This step will be a little messy, but do not fret as we will fix it in the next step
Step 5 – Once you have finished rolling all the mixture, wash your hands and re-grease with a little ghee and give all the roughly rolled balls a quick finish

Last fall, I was invited to a friend’s house for a Diwali potluck dinner. I needed to come up with a dessert that was simple and quick to make, and yet tasty enough that it would please a variety of folks. You are right to think that this is a difficult challenge and it reminded me of a quote I read on the internet – “I cannot make everyone happy – I am not Thayir Saadham (curd rice)”😃. Traditional Indian sweets involve a lot of cooking and during Diwali we (Indians) make/buy a lot of different sweets. Every Diwali, I spend several hours in the kitchen churning out sweets and savories that require a lot of time and effort but end up with very little quantities that are barely enough to distribute. Anyone one else feel that way? So I had to think of something that was quite the opposite – easy to make, yet enough to share. That’s when I remembered something my sister taught me a decade ago when she was living in Spain – coconut snowballs. However, my kids were not a big fan of coconut-based sweets. So I decided to add a few chocolate chips, which they are fond of. To finally give it an Indian touch, I tossed in a few almonds toasted in ghee. Et voilà! My family loved it so much that we decided to take a few of these treats to that Diwali party, where they thankfully became an instant hit 😍

Tips / Variations
- Replace semi-sweet chocolate chips with dark chocolate if you like
- Simply skip the nuts if you have allergies
- Use gluten free condensed milk to make this gluten-free
