WHAT YOU WILL NEED
Ingredients
Note: 1 cup = 235 ml
For grinding
- 2 cups cilantro, tightly packed
- 1 serrano chilli / 3-4 green chillies
- 2 garlic pods
- ½ Tbsp. ginger
- ½ tsp. cumin powder
- ½ tsp. dry mango powder
- ½ tsp chaat masala powder
- ½ tsp. black salt powder
- Salt to taste (½ tsp. salt)
- 2 tsp. lemon juice (juice of half a lemon)
- 1 tsp. white vinegar – optional
- ½ cup Greek yogurt / homemade yogurt – plain
Note: The pH / acidity of vinegar prevents bacterial growth. So adding a few drops to dips and chutneys that involve no cooking helps retain the freshness, flavor and color of the food for a longer time

PREPARATION (with step-by-step photos)
Step 1 – Place 2 cups cilantro leaves, 1 serrano chilli, 2 garlic pods, and ½ Tbsp. ginger in a medium sized blender jar. Add ¼ cup water and grind it to a smooth paste
Step 2 – To this, add ½ tsp. cumin powder, ½ tsp. dry mango powder, ½ tsp. chaat masala powder, ½ tsp. black salt, and salt to taste (½ tsp. salt). Give this a quick pulse
Step 3 – Add 2 tsp. lemon juice, 1 tsp. white vinegar (optional), ½ cup yogurt, and mix everything until well incorporated. Transfer to a serving bowl
