WHAT YOU WILL NEED

Ingredients

Note: 1 cup = 235 ml

For grinding

  1. 2 cups cilantro, tightly packed
  2. 1 serrano chilli / 3-4 green chillies
  3. 2 garlic pods
  4. ½ Tbsp. ginger
  5. ½ tsp. cumin powder
  6. ½ tsp. dry mango powder
  7. ½ tsp chaat masala powder
  8. ½ tsp. black salt powder
  9. Salt to taste (½ tsp. salt)
  10. 2 tsp. lemon juice (juice of half a lemon)
  11. 1 tsp. white vinegar – optional
  12. ½ cup Greek yogurt / homemade yogurt – plain

Note: The pH / acidity of vinegar prevents bacterial growth. So adding a few drops to dips and chutneys that involve no cooking helps retain the freshness, flavor and color of the food for a longer time

Homemade Yogurt

Cilantro leaves, stem and seeds are a ubiquitous part of Indian cooking. It is also known as coriander or Kothamalli (Tamil) or Dhaniya (Hindi).  It has a cooling effect on the tastebuds with its freshness and flavor when added as a topping to any recipe. And if cilantro is the main or substantial ingredient in a recipe it is nothing but sublime – Kothimbir Vadi, Undhiyu, and of course, a great Guacamole. Green (cilantro) chutney is an essential dip / sauce / dressing for many recipes in India. And while there are many recipe variations, we prefer the one with yogurt to give comfort to your gut when your tongue craves for a deep fried or spicy appetizer. Happy dipping😋
