This stuffed cocktail tomato recipe does just that. This dish bursts with flavor, especially since tomatoes are in season in summer, and are rich in protein with a yogurt/cheese based stuffing. Take a few ripe cocktail tomatoes, stuff them with filling made of greek yogurt, cream cheese and avocados, add a dash of herbs and olive oil and you have yourself a tasty and healthy snack for spring and summer events

What you will need to make Stuffed Cocktail Tomatoes 

Ingredients

Note: 1 cup = 235 ml

  1. 16 cocktail tomatoes
  2. ¼ cup plain cream cheese, softened
  3. ¼ cup Greek yogurt
  4. ½ avocado, mashed
  5. 1 Tbsp. spring onion green, finely chopped
  6. 1 Tbsp. cilantro, finely chopped
  7. ½ Tbsp. extra virgin olive oil
  8. 1 tsp. Italian herb mix
  9. A pinch garlic powder (optional)
  10. Salt to taste (¼ tsp. salt)
  11. ¼ cup cucumber, finely chopped

Equipment

  1. 1 cutting board
  2. 1 serrated knife / tomato knife
  3. 1 melon ball cutter / flat spoon
  4. 1 plate
  5. 1 paper towel
  6. 1 container to store scooped tomato
  7. 1 pastry decorating bag / a Ziploc bag
  8. 1 medium size bowl
  9. 1 large fork

A note on key ingredients

Cocktail Tomatoes come in clusters of 7 to 8 on the vine. You can find them in various colours including the regular red, yellow, orange and sometimes even blue and purple. These are smaller in size than regular tomatoes but larger than your typical cherry or grape tomatoes. Their sweet flavor complements well with the filling making it ideal for finger snacks for barbeque parties

Cream Cheese gives body to the filling and improves the taste of the dish. The whole filling for this dish can be made alone with just cream cheese, but including greek yogurt and avocado gives it a healthier balance and it’s what my family prefers

Greek yogurt works best in the recipe. You can use homemade hung yogurt as well. Some recipes use mayonnaise, but I prefer greek yogurt in combination with avocado

Avocados camouflage well in the filling and enhance the taste, and why not add them as they are super healthy

Simply slice the tops of the tomatoes, scoop out some flesh, fill them with our creamy yogurt and avocado filling, refrigerate and serve them chilled

Tips before you begin

📝 Picking the right size of the tomatoes is very important as these are served as finger foods. If the tomatoes are too big it will be inconvenient to pop them into your mouth and if they are too small, filling them will be a pain

📝If you find the tomatoes are too wobbly and do not stand up, you can set them on an egg tray sold for serving deviled eggs or on an empty ice tray


How to make Stuffed Cocktail Tomatoes – Instructions with step-by-step images

Slice and scoop

Step 1 – Slice the top of each tomato and scoop out some of the pulp and place them upside down onto a paper towel to drain excess juice. Do not throw away the pulp, you can use them to make broth, soup, rasam or pasta sauce

Prepare the filling

Step 2 – In a small bowl, combine ¼ cup softened cream cheese, ¼ cup greek yogurt, ½ an avocado, 1 Tbsp. finely chopped spring onion green, 1 Tbsp. finely chopped cilantro, ½ Tbsp. extra virgin olive oil, 1 tsp. Italian herb mix, a pinch garlic powder and salt to taste (¼ tsp. salt). With a fork, mash all of this together until well incorporated and the avocados are smooth

Step 3 – Now add ¼ cup finely chopped cucumber and mix well. Transfer this into a pastry decorating bag or a zip lock bag and secure it with an elastic band

Stuff, Refrigerate & Serve

Step 4 – Simply squeeze the filling into the tomatoes and set them in the refrigerator for at least an hour before serving

How I learnt about this recipe 

When these delicious cocktail tomatoes flood the markets in summer, I usually bake them in the oven and toss them over pastas or salads. A few weeks ago, a box of cocktail tomatoes was sitting on my kitchen counter but with an ongoing heat wave outside and with no AC in our house, I had sworn not to turn on the oven. When I searched for a few no-bake recipes using sweet tomatoes, I came across some interesting cherry tomato recipes but they all called for the use of mayonnaise. My trusted avocado cream cheese sandwich recipe saved the day. I drifted to thinking how my elementary age kids and their friends loved cream cheese sandwiches during picnics and playdates. A filling that was a combination of the original recipe and my twist of avocado-greek yogurt made their way into my kids bellies before I could even set them on the plate. Since, no recipe gets posted here without several taste tests, we discovered that these taste the best when served chilled!

Variations

  • You can play with the filling combinations. I have tried it with cucumber thayir pachidi / thick raita and it tastes just amazing. Make sure to use hung yogurt.

❔Can I use hung curd instead of Greek yogurt

Absolutely, hung curd will taste just as good. Ensure that the yogurt is set to hang inside the refrigerator so it does not become sour

❔Can I replace cocktail tomatoes with any other variety

Only if you can find tiny Roma / Bangalore tomatoes. You’ll also have to serve them halved similar to deviled eggs. I haven’t tried it myself though
